If you are cooking for a bunch of people, you can impress them no end by telling them that you have made your own pasta.
They will automatically look at you as if you have endless amounts of skill, love and time in the kitchen. It really is quite simple, and doesn't take much time:
Ingredients
2 cups Plain Flour
3 large eggs
Author's note: Eggs are really hard things to measure, especially if you are using eggs from your own chickens. If you have small eggs, use more. If you only have access to Ostrich eggs, use less.
The Volcano Method
1. Make a small mountain of flour on an ultra clean bench-top. You need quite a bit of bench space for this.
2. Make the pile of flour look more like a volcano than a mountain, and then crack the eggs into the pit of the volcano.
3. Mix the lava of the volcano around a bit, piercing the yolks in the process.
4. Gently cave the walls of the volcano into the egg-lava pit with a fork, and stir. Keep doing this until the volcano had turned into a pile.
5. Use your hands to mix everything together. It should end up looking like a yellowish ball. If it is too dry, add more egg mix. Too runny, add a small amount of flour.
6. Now it is time to kneed the dough. Think of the worst supervisor / boss you have ever had. Harness your anger and press down on the dough with the palm of your hand. Fold over and repeat for ten minutes. When all is kneeded, wrap the dough in cling-film and leave to sit at room temperature for 20 minutes.
7. Un-wrap cling-film and slice off a small section with a knife. Using a rolling pin, flatten the section as thin as you can. Repeat with all of the pasta dough.
8. Once completed, you can slice the pasta into strips and boil, or dry it out and use later. If you are cooking lasagna, you can use it immediately without boiling or drying. That is what I do mostly, and it tastes fantastic, and is pretty much catastrophe proof.
If you do make lasagna, make sure you start with a layer of sauce on the bottom. You may bake the pasta dough to the base of the pan otherwise.
